Tasting session
Fine Rueda wine, haute cuisine and origin
Guided by Pedro Ballesteros (Master of Wine, board member of the Spanish Union of Wine-tasters and member of the Basque Culinary Center Wine Committee), participants in this session will have the chance of tasting six varieties of Gran Vino de Rueda.
This wine focuses on haute cuisine, demonstrating the immense versatility of the "verdejo" grape, a local variety of the Rueda Denomination of Origin. In order to be classified as a "Gran Vino de Rueda", the wine must meet a number of technical requirements: it must be produced at vineyards going back more than 30 years, it must have a maximum output of 6,500 kg/ha, 65% kilo/litre transformation, and it must have been cellared over more than 12 months. The final outcome is a wine that emphasises the importance of older vineyards and the work of winemakers, preserving the local heritage and origins.
