The 25th anniversary of Gastronomika is an opportunity for Josean Alija to take stock and rethink the future.
Produce, seasonality, technique and essence are the pillars on which the cuisine of Josean Alija, chef at Nerua Guggenheim Bilbao, is built. It is a cuisine that has always been characterised by combining only a few elements and in which flavour and texture are the key elements.
