The owners of AMA will tell us how they are committed to sustainability in all aspects of their restaurant, and how their relationships with small suppliers are the basis for everything.
Javier Rivera and Gorka Rico will explain how they work with producers to protect and pass on their ways of doing things. And doing so while using the same products they have always used, they are able to achieve totally different proposals to what diners might expect. This is what “the exoticism of local resources" is all about, they say.
