Retrospective. Legumes in Casa Marcial's cuisine

Legumes, apparently simple fare, the backbone of Casa Marcial's culinary language.

Legumes have been a part of Nacho Manzano since the word go. They had them at home because his parents grew them, as did most of their neighbours. They were the ingredients of his initial recipes when he cooked no more than the usual fare. And nowadays they are still a modern feature at his restaurant, where they are collected at the proper time and added to the recipes.
